To Start, you can make 4 kebabs with 2 large boneless, skinless chicken breasts. More for more company.
You will need:
3 Garlic cloves
1 tsp each Salt and Pepper to taste
1 TBS Oregano
1 tsp Basil
2 TBS olive oil
1 lemon, juice freshly squeezed
1 Red Bell Pepper, and 1 yellow or green
1 large red or yellow onion
Chop the chicken up into 1/2″ cubes. Mix together the oil, lemon juice, oregano, pepper, salt, crushed garlic cloves and basil. Mix it all up in a bowl and it should look like this.Add the chicken cubes into the bowl, mix them around in it and cover it up with saran wrap and let sit for 20 min, up to 3 hours in the fridge. Slice up the vegetables in cubes as well to go on your skewers. Then when the chicken has done marinating, start adding everything on the skewers. I don’t do any specific pattern, I just grab and go. Then, I add whatever juice is left in the bowl and pour it onto the skewers to lightly coat the vegetables. Now, start up your BBQ! Go to a light heat, as the chicken will burn quick and try to stick to the bbq if its too hot. Place the skewers on, turning them up to three times. Quick note: to get the neat searing lines on your skewers to make them look professionally done, place them on an angle. Once they’re ready, serve with a bed of rice or salad, and VOILA! YUMMY!
