Having a great meat on the BBQ is great, but having great sides to go with it is just as important. And nothing screams SUMMER BBQ to me more than a great, light and fresh salad. Salads can be easy, and yet can also be pretty boring. This is a simple way to jazz up a tossed green with summer flavor without a lot of work. Its simply made from chopped Romaine lettuce as your base. Based on a family of 4 (2 of which are under 4 years old, so their portions are little) this is how I am calculating the portions.
1 Head of romaine lettuce, washed and chopped.
1 tomato, chopped in 1/4″ chunks
1/2 English Cucumber, sliced and cut in half. Take off some of the skin if you prefer
2 Heads of spring onions, sliced
4 TBS of grated cheddar cheese. We use OLD cheddar, because its got a bold taste to it that adds extra flavor to the salad, rather than blending in
4 hard boiled eggs, sliced (remove yolks if you prefer, my husband likes them, I don’t care for them)
Pinch each of salt and pepper
3 TBS of Bacon bits. Now this is the fun thing, you can get a pack of real bacon bits in a bag, and that’s fine. Or, if you had bacon for your breakfast and you have left overs, don’t throw it away! Pat the grease off with a paper towel, chop it up and put it in an airtight container. Use it in your salad. Not only do you have fresh bacon on your salad, but you’re not wasting any food that way. 🙂
Mix everything in a dish, (I have it lined up so you can see what’s in it) without forgetting to add that salt and pepper in it. That’s important, seasoning your salad always helps the taste of the vegetables POP. Use any dressing you choose. And you’ve got yourself a great hit salad at your next bbq.
