These were whipped up, because I had some peaches and didn’t want them to go off. So, I created a yummy simple muffin perfect for an on-the-go snack or with a beautiful brunch. My kids love these as a snack. These are also extremely simple.
Take your peaches and shave the skin off and dice them up. Whether you only have one or two cups of peaches, this recipe can adjust to any amount.
Here is what you will need:
1 cup milk
1 cup quick oats
2 eggs
1/4 cup vegetable oil
1 cup all-purpose flour (use whole wheat for an even healthier alternative)
1/4 cup sugar
2 tsp baking powder
1/2 tsp salt
1-2 cups of diced peaches
2 tsp cinnamon
Preheat oven to 425F.
First in a small bowl, mix the milk and oats together. Set aside.
Next, mix the eggs, oil and flour together with a whisk. Then add sugar, baking powder and salt. Mix in the oat mixture. Then add in the peaches and cinnamon. Mix together. Grease a muffin pan. I used a small muffin pan, specifically for my daughters.
Bake for about 20-25 minutes, until the fork come out clean. Let cool for about 5-10 minutes before removing from pan. Enjoy!
