There is something about buying a bunch of bananas and knowing that half of them will be used for baking, that excites me. Am I lame? Probably. But these cookies, are not.
What you will need:
2 3/4 cups all-purpose flour
1/2 tsp baking soda
1/4 tsp salt
1 cup brown sugar, firmly packed
1/2 cup white sugar
1 cup of butter or margarine
1 egg
2-4 tsp Spiced Rum. Yes, here is the secret ingredient 😉 I only did 2 for the kids batch and 4 for the adults 😉
2-3 ripe mashed bananas (if you only have 1, that’s fine, it just wont have much of a banana taste)
2 cups semisweet chocolate chip cookies
1 1/2 cup chopped walnuts
Not a drop of dough is left behind 😉
First, turn on oven to 300F. Then, in a medium bowl, whisk flour, baking soda and salt. Set aside. In a large bowl, with either a whisk or electric blender, mix sugars. Then add the butter, bananas, egg and rum. Slowly add in the flour mix. Then fold in the walnuts and chocolate chips.
Drop the cookies by teaspoon or tablespoon to baking tray giving 1-2 inches apart. Bake in the middle rack for 25-30 minutes. Let cool for 3 minutes before transferring to a cooling tray. These will definitely be a cookie recipe to remember 🙂
