Cottage Pie

Mmmmmm.  I don’t know much more to say about this. but what a simple homestyle type of dish.  You can prepare this early and then pop it in the oven when you’re ready for dinner.  It’s just so easy.

Here’s what you will need:

1lb lean ground beef

1 yellow onion diced

1 cup carrots sliced

1 cup peas

3 TBS tomato paste

1 TBS Worcestershire sauce

1/2 cup beef stock

salt and pepper to taste

1 tsp red chilli pepper flakes

6 large potatoes cooked and mashed to your liking.  May I suggest for a healthier version: Mashed Potatoes with Cauliflower!

Here’s what you will do.  Start by browning the lean ground beef in a pan.  Once it is 80% brown, add in some salt and onions.  Cottage Pie - the amazing mommyKeep an eye out and sauté a bit longer.  Add in the carrots and peas.  Next add in the tomato paste and stir until lightly mixed.  Add in the Worcestershire sauce, beef broth, chill flakes and pepper.  Let it sauté a bit longer until the veggies cook, but are definitely still crunchy than take off the heat.Cottage Pie - the amazing mommy  Whilst this is happening, make sure to work and finish your potatoes.   Place the beef mixture into an over ready casserole dish and flatten it (but don’t push it down too hard.)
