Mmmmmm. I don’t know much more to say about this. but what a simple homestyle type of dish. You can prepare this early and then pop it in the oven when you’re ready for dinner. It’s just so easy.
Here’s what you will need:
1lb lean ground beef
1 yellow onion diced
1 cup carrots sliced
1 cup peas
3 TBS tomato paste
1 TBS Worcestershire sauce
1/2 cup beef stock
salt and pepper to taste
1 tsp red chilli pepper flakes
6 large potatoes cooked and mashed to your liking. May I suggest for a healthier version: Mashed Potatoes with Cauliflower!
Here’s what you will do. Start by browning the lean ground beef in a pan. Once it is 80% brown, add in some salt and onions. Keep an eye out and sauté a bit longer. Add in the carrots and peas. Next add in the tomato paste and stir until lightly mixed. Add in the Worcestershire sauce, beef broth, chill flakes and pepper. Let it sauté a bit longer until the veggies cook, but are definitely still crunchy than take off the heat.
Whilst this is happening, make sure to work and finish your potatoes. Place the beef mixture into an over ready casserole dish and flatten it (but don’t push it down too hard.)
Top with the mashed potatoes.
You can freeze it now if you like, or place into fridge until later, or put it in the oven. Set oven to 375F. Place in the oven until the tomato juices start dying the sides of the potatoes. That’s how you know the juices are boiling nicely and cooking it together. Yummy!
Serve with garlic toast, bread and butter, gravy, shredded cheese or whatever you like!
